Chicken with Sweet Sour Sauce



In Thailand we have many recipes for "sweet and sour dishes" such as sweet and sour stir fry chicken, Sweet sour salty sauce with fry fish.(we call Pla Sam Rod mean 3 tastes fish)

This recipes I tried to made sweet and sour sauce with ingredient I had in my kitchen that day.

Sweet and Sour Sauce :

5 slices of Ginger.
4 cloves of Garlic smashed
2-3 table spoon Thai chili sauce (Sri RaCha Sauce)
1 orange (juice only)
1 lemon zest and juice.
2-3 Table spoons brown sugar
1/4 cup Thin soy sauce (Thai soy sauce)
Black pepper

Add all ingredient to sauce pan bring to boil and simmer for 5 minute.Let it cool.
Marinate 4 Chicken Tight bone in skin on.(or your choice of chicken) For over night.

The next day : bake chicken at 400F for 35-45 minutes or until chicken cook, turn oven to broil 3-4 minutes to finish.

In the meanwhile add the sauce from marinated chicken to the sauce pan bring to boil and simmer until the sauce become thick.strain the sauce.

Put sauce over the chicken.

Easy Thai steak with Tamarind Sauce




Simple Beef marinated: 3/4 -1lbs round steak,or rib eye steak.

2-3 cloves of garlic,
1/2 Tbs black pepper corn,
1/2 Tbs coriander seed
1/2 teaspoon of kosher salt
2 teaspoon of soy sauce

Finely grind peppercorn and coriander in motor, Add garlic and salt pound mixer until smooth.
Add mixer and soy sauce in a bow for marinate beef as leas 15-20 minutes.

Broil or Grill steak the way you like, I like steak cook between medium rare to well done for Thai steak.

Slice steak,serve with steam sticky rice or steam Jasmine Rice with Tamarind sauce.

Tamarind Sauce
: this sauce is good for all kind of meat, bake chicken,grilled pork and steak.

2-3 table spoon of Thin soy sauce
2 table spoon of Tamarind juice.
2-3 teaspoons of palm sugar or brown sugar
1 table spoon of lime juice
1 shallot chopped
1-2 teaspoon of dried chili,
1 table spoon chop cilantro.
1 table spoon ground toasted rice powder

In small bow add all Liquid ingredient and sugar, stir until sugar melt.
Add the rest of ingredient mix well.

Adjust the taste the way you like by adding sugar or soy sauce,tamarind: Sweet sour and salty.

Tamarind juice : you can find in Asian grocery store.
If you can't find tamarind juice use dry tamarind (You can find in Mexican grocery)
Soak dry tamarind in boiling water-stir and drain for the juice.
